Stove-Top Sweet Potatoes

As the harvest season continues, we want to share recipes that are enjoyable for the whole family. Whether you are cooking for your yourself or a family of four, this quick simple recipe is easy to follow! Ingredients: - 2 large sweet potatoes - 1 cups of water - ½ stick of margarine - ½ cup brown sugar (1/4 cup or white sugar or pancake syrup) - 1/8 of a teaspoon vanilla extract - Pinch of cinnamon and/ or nutmeg How to: Peel and cut sweet potatoes into quarter inch thick slices. Place in water into 8-quart stock pot and set on medium heat on a stove. Add all other dry and wet ingredients. After 15 minutes, rotate potatoes from the bottom to the top for even cooking. Check the potatoes for firmness with a fork. You want it to puncture the sweet potatoes and not break it up. Check frequently to avoid overcooking. It should be done within 10 to 15 minutes. When the sweet potatoes are done, it will have a shiny, smooth glazed finish.
