Mini Spinach Quiche


- 3 ounces of frozen spinach (cut the leaf)

- 1/2 of onion chopped (white or yellow)

- 2 eggs

- Cheddar cheese

- Muffin pan (optional)

- Mini Pastry / Pie Crusts


  1. Cook spinach until thawed, and then drain.

  2. Lightly coat muffin pan with oil. Place mini pie crust in muffin pan. Can use the mini pie crust that comes in a disposable tin pie dish.

  3. Combine onions, two beat eggs, and cooked spinach in a bowl and mix together (season to taste).

  4. Fill mini pie crusts almost to the top with mixture.

  5. Add cheddar cheese to the top of each mixture.

  6. Convection oven: Bake at 350° for 20 minutes or until cheese browns Regular Oven: Bake at 350° for 30 minutes or until cheese browns

  7. When done baking, remove from oven and serve while hot.
