Homestyle Lentil Soup

Hello Family,
Here is a quick, easy and nourishing comfort-food meal to make for your family. Celebrate the harvest season!

Ingredients:
- 1 bag of brown or red lentils
- 1 whole onion
- 1 red or orange pepper
- 2 cups of cold water
- 2 cups of vegetable stock
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 1 tablespoon of Adobo seasoning
- Crock-pot (or traditional 3 quart pot)
Directions: First, put lentils into a colander and rinse with cold water. Throw away discolored (green or solid black) lentils. Place lentils into crock-pot, add vegetable stock and cold water. Add half of a chopped onion, Adobo seasoning, salt and pepper to mixture. Set on low/medium heat and let cook for 4 to 6 hours. If you are using a traditional pot, set on medium heat and stir every 45 minutes. After 2 hours, set it on low and let it cook slowly for another 2 hours. Chop the other half of the onion and one whole pepper. Sauté chopped onions and pepper in butter (margarine or olive oil works too) until the onions are transparent (about 5 minutes). After the first 2 once finished hours, add your sautéed vegetables to the lentils. This will add a richer flavor to the lentils. Once finished, serve and enjoy!
